Our Tomatillo de Milpa is a rare heirloom landrace variety that holds true to its heritage of being grown as one of the key companion plants to support corn and each other to grow nutrient dense food. We artisinally grow in small batches. Unlike the mass produced large, watery tomatillos you find at the grocery store, we artisinally grow ours in small batches and their fruits hold a deep, complex flavor in a nutrient packed cherry of jewel-toned blushing purple.

The Process:

Genetic Proximity

We begin with the elite survivors. Each year, we meticulously save seeds only from the most vigorous, high-yielding plants that show an uncanny ability to withstand intense Hill Country heat without stress. This rigorous selection process ensures your peppers carry the specific genetic programming required to maintain consistent taste, heat, and structural integrity through the erratic weather of the Dripping Springs and Austin corridor.

The Start: The Mineral Foundation

We sow our heirloom seeds in our custom Organic Seedling Mineral Mix, utilizing a "roots-first" approach. Unlike peat-heavy commercial mixes that create "soft" plants, our mineral-rich start forces the seedling to build "silica-tough" stems and a deep, vertical root system from day one. Only the most vigorous seedlings are selected to move forward.

The Hardening

Established seedlings are transitioned into deep, air-pruning square pots filled with our Organic Heritage Mineral Blend—a biologically active "living soil" with aged ranch minerals and organic compost. They are field-hardened in unapologetic full sun, ensuring that by the time they reach your landscape, they are already accustomed to the Texas gusting winds and intense sun.
